The microwaving times are given as totals – make sure that you stir the flour and break up any lumps after each minute of microwaving. I’ve included details of flours we tested with less than a 9% protein content for the sake of completion and to give a flavour of the range of flours across the world that can be successfully ‘bleached’ through microwaving.
